Spicy Honey Balsamic Salmon Bowls with roasted asparagus and the yummiest lemony avocado herb and feta salad. Salmon chunks are baked until glazed in a deliciously tangy, salty-sweet balsamic sauce. Arrange fresh asparagus or broccoli around the salmon and bake everything together on the same sheet pan. The balsamic sauce reduces around the salmon, and the vegetables cook up perfectly. Serve this salmon and asparagus together over steamy rice with plenty of that lemon avocado feta salad! YUM!
We’re more than halfway through the month of April, and I’m so excited to share all these fresh spring recipes. We had a lot of snow and chilly days over the weekend, so fresh recipes are top of mind. I’m craving those springtime days and blooming flowers.
I’ve been waiting to share this salmon until today. It’s such a wonderful sheet-pan dinner that comes together simply and with only the freshest spring ingredients!
This bowl was inspired by the honey balsamic chicken I shared a couple of weeks ago. I just loved the sauce on the chicken and knew something similar could be so delicious on cubes of baked salmon.
However, I didn’t want to create the exact same recipe. I wanted to make a fresh salmon bowl with a spicy, salty, tangy, and sweet balsamic sauce.
This turned out perfect, and I’ve already made the dish a handful of times since. It’s a wonderful way to cook with salmon!
Step 1: make the balsamic sauce
In a small pan on the stove, simmer the balsamic vinegar with the honey, tamari (or soy sauce), grated garlic cloves, thyme, oregano, and a hefty pinch of chili flakes (or to your taste).
Simmer the sauce until it just thickens up slightly, about 2 to 4 minutes.
Step 2: bake the salmon
Next, toss the salmon cubes on a sheet. Then, pour over about half of the balsamic sauce. On the other side of the sheet pan, toss the vegetables with oil, salt, and pepper.
Bake everything until the salmon is cooked to your liking. I usually bake for around 10 minutes. Then, switch the oven to broil and allow the sauce to caramelize around the salmon cubes.
Step 3: the avocado salad
While the salmon and vegetables are cooking, mix the avocado salad.
Stir together chunks of avocado with sesame oil, lemon juice, toasted pine nuts or other nuts/seeds, fresh herbs (I like dill and basil), and then lots of crumbled feta cheese.
This mix is so yummy!
Step 4: make the salmon bowls
When the salmon comes out of the oven, toss it with the remaining balsamic sauce. Now, spoon the salmon and vegetables over bowls of rice. Add the avocado salad on the side or overtop of the salmon.
Then, I like to finish with fresh thyme, it’s really pretty!
The salmon in the balsamic sauce is totally delicious! And even more so with the avocado and feta on top. I know you will enjoy it!

Looks gorgeous, some comments mention the Avocado Salad work so well with the Salmon, sadly, my husband won’t eat Avocado, and suggestions what I could use instead?

I questioned this when I started making the sauce and smelled how vinegar forward it was – my husband is not a vinegar fan – but omg was this delicious!! We both loved it. Tangy, super flavorful and oddly not vinegary. The avocado mix was needed, it gave the perfect balance of creamy and cool that it needed.
Easy to make but felt very fancy. Nice work, this is yet another winner!

I made this last night and it was so delicious! I used broccolini instead of asparagus and sunflower seeds for the nuts/seeds because that’s what I had on hand… super easy and SO yummy with the avo salad on top!!
